The dough for such a pie can be made into bulk. The beauty is that it is easy to prepare and always turns out. And if you have very little time, you can prepare it, prepared in advance or bought at the store.

  3. Turn over and lightly roll out with a rolling pin to a flat circle. We do this carefully so as not to tear the dough.

  4. Place the finished pie in a baking dish, lightly greased with vegetable oil or lined with baking paper. We make a small hole in the middle to allow steam to escape and prick it with a fork, being careful not to touch the bottom.

  5. Grease our pie with cream or egg - this will make it more fried and rosy. You can sprinkle with sesame seeds as a decoration. When prepared it looks very appetizing.

Kefir dough is one of the easiest to prepare; it is prepared by simply mixing the dough ingredients in one deep container. Thanks to the combination of sour kefir and a small portion of soda, an alkaline reaction occurs, which, by analogy with yeast, will give us an airy dough structure.

Mix kefir, lightly shaken egg, oil, salt, soda in a bowl.

Sift the flour in advance and add the already light and fluffy flour to the kefir mixture. First add only 2 cups of flour, add the rest when kneading the dough.

It will turn out slightly sticky, but despite this, there is no need to “fill” it with excess flour; it is better to grease your hands with oil while kneading the dough if it still sticks too much to your palms or work surface. Knead until smooth, and then refrigerate for 30-35 minutes (don’t forget to cover with film).

For the meat filling, we use minced meat according to your personal preference or the availability of a certain piece of meat (beef or pork) in the refrigerator. Mix the minced meat with the onion: chop one onion very finely, almost into a pulp, cut the second into thin, transparent rings.

Do not neglect this, otherwise you risk chewing onion rings that are not fully baked in the finished pie. Add garlic, finely chopped with a knife, and half a bunch of fresh herbs. Parsley will be very harmonious with minced meat, but dill also goes well with other ingredients in savory baked goods.

Salt and pepper the meat filling, pour in milk (cream or sour cream). Now we intensively knead the minced meat with our hands, crush the onion rings and release the “juice” from them so that the minced meat comes out juicy and tasty. Mix until completely even.

Roll out the dough into a layer, the width of the layer is about 5-7 mm. Place the minced meat and onions in the center. If you used beef in the minced meat, first grease the dough layer with vegetable oil.

We collect all the dough towards the middle of the cake, without gaps. Flatten the cake, making sure that there are no gaps or gaps through which liquid can leak out. Using a rolling pin, carefully roll out the cake, leveling it over the surface and finally sealing all the folds.

Then turn the pie over to the reverse side, give it the correct rounded shape and grease the top surface with sour cream.

Using a fork or knife, make small holes in the top layer of dough (without touching the bottom of the pie).

Sprinkle with sesame or flax seeds. Bake the meat pie with kefir for about 40-45 minutes at an oven temperature of 180 degrees. This pie is reminiscent of Caucasian pies, but I cannot say whose recipe it is. The formation of the pie is similar to khychin, but they are rolled out very thin and the dough is prepared with yeast. This pie is not difficult to make and turns out very tasty. It is best to take fattier meat for it, and for juiciness, add milk or cream to the minced meat; believe me, the taste is completely different.

Prepare the dough. Lightly whisk the egg with salt. Add kefir, soda, vegetable oil and stir well.

Then you need to add flour, as much as the dough takes. Approximately 2-2.5 cups of flour may be needed.

The dough should be soft enough, slightly sticky, but should be easy to handle. It turns out to be quite obedient and does not stick to the table due to the vegetable oil. Knead the dough on the table and leave it under a towel to “rest” for 20 minutes.

Let's prepare the filling. Grind the meat in a processor or grind in a meat grinder along with a clove of garlic and half an onion.

Cut the rest of the onion into thin strips, chop the greens and add to the minced meat. Add salt and pepper to taste. Add cream or milk to make the minced meat juicy. The more onions in the filling, the juicier the pie will be. Just cut the onion very thinly.

Roll out the dough on the table into one large flat cake. The thickness of the dough is at least 8 mm. Place all the filling in the center.

Gather the edges towards the middle and pinch, leaving no gaps through which the juice may leak out during baking. Carefully expel the air from inside, otherwise the cake will swell greatly during baking and may burst.

Level, turn over and roll out with a rolling pin to an even and flat circle. My pie turned out to be more than 30 cm in diameter. Prick the top with a fork, without touching the bottom, brush with cream or egg, sprinkle with sesame seeds and nigella. Bake at 180 degrees for 30 minutes. In a gas oven the temperature will be higher - 200-220 grams.

You can leave a small hole in the middle to allow steam to escape. My pie is slightly swollen.

Sprinkle the finished meat pie with minced meat with water and cover with a towel for 15 minutes.

Meat pie with kefir - tricks and useful tips

Kefir for the dough should be at room temperature. If you pour cold kefir into the flour, the dough will not rise and will be gummy.

To prevent the cake from “blowing” during baking, several punctures are made with a fork before sending it into the oven. This will allow steam to escape easily and not linger inside the cake.

The pie can be checked for doneness with the tip of a sharp, dry knife or a wooden toothpick.
