Sesame without flour

Products are not a recipe

  • sesame 285 g;
  • citrus essence 3 drops;
  • egg 3 pcs.;
  • sugar 95 g;
  • vegetable oil 11 ml.

Recipe

  1. Divide the eggs into whites and yolks. Set aside the yolks for preparing other dishes, and beat the whites with a mixer until a white, stable foam forms. At the end, add granulated sugar to the protein foam and beat until it is completely dissolved.
  2. Combine sesame seeds with proteins and citrus essence.
  3. Cover a baking sheet with parchment greased with vegetable oil. Place cookies using a spoon onto a baking sheet. Bake at 180 degrees for about 15 minutes. A wooden stick is not needed to determine the degree of readiness; the cookies spread and become a thin crust. Watch carefully so that the cookies do not burn. Once it turns golden, remove from the oven. These Lenten Sesame Cookies are quite filling. You can eat it with pieces of cheese for breakfast.

I wish you good health and successful culinary experiments!

The most attractive aspect of these cookies is the abundance of sesame seeds. These small, very tasty grains are record holders for calcium content. Accordingly, the cookies are very nutritious, you really can’t eat too much of them, they fill you up quickly. And the second very important advantage of this particular recipe is that the baked goods are prepared very quickly and the cookies are incredibly crispy. It does not crumble, not a single grain separates from the cookie during baking, that is, it holds its shape perfectly.

What you should pay attention to is the features of your oven. When baking the first batch, you need to be careful so that the cookies do not burn around the edges.

At the specified temperature of 190 °C, my cookies began to brown unevenly and too quickly; they “went” to 175 °C. Baking time was about 10-15 minutes. But still, the cookies do not brown evenly; there is a gradation in color, but this does not affect the taste and crispiness. The hot cookies are still soft and slightly sticky. But after just a couple of minutes, after being removed from the baking sheet along with a sheet of parchment, the cookies “set” and become hard.

From the specified amount of products I got 30 cookies, each about 6 cm in diameter. When baking, the cookies spread greatly over the area.

Lemon juice is an important component, I believe that it is its presence that determines the crispy properties of the cookies.

Cookies with (or from) sesame seeds are a delicious dessert that goes well with tea or coffee. It is quite easy to prepare and very healthy, especially for children: sesame contains much more calcium than many other foods. And if you try to bake it in different ways, the taste will “sound” differently each time.

Despite its apparent lightness, sesame cookies are unlikely to be suitable for dietary nutrition. Not only because it is a sweet dish, but also because of the sesame itself, which is not for nothing called the “oil plant.” It contains a lot of vegetable fat - even oil is pressed from sesame seeds. So there are plenty of calories in such a dessert, and young ladies who are watching their weight and figure should not get carried away with it.

By eating just one hundred grams of your favorite cookies, your sweet tooth will receive:

  • 8.5 grams of protein (that's 11 percent of the daily value);
  • 24.7 grams of fat (almost 26 percent of the required daily amount);
  • 50 grams of carbohydrates (which is about 17 percent of your daily requirement).

The total calorie content reaches 433.5 kcal (1814.98 kJ) - this is a quarter of what the body is supposed to provide for one day.

But it's okay to treat yourself from time to time. And if the calorie content of sesame cookies does not scare you, since by nature an increase in waistline does not threaten, or simply does not bother you, it is all the more worthwhile to get acquainted with the recipes for the delicacy.

Let's crunch some Sesame

These pastries are reminiscent of oriental delicacies, light and deliciously crispy. There is another plus - to prepare it, you don’t need a lot of effort, time, and you don’t have to be an ace pastry chef. Everything is done simply and quickly.

Let's take 0.5 kilograms of sesame. Lightly fry in a frying pan to achieve a golden hue.

Then let's do the dough. We will need:

  • a glass of granulated sugar;
  • a pair of raw eggs;
  • half a glass -100 g – oil (vegetable);
  • a glass (200 g) of premium wheat flour (you need to sift it first);
  • baking powder (if you don’t have a special baking powder, baking soda will do).

Carefully rub the eggs with granulated sugar. Add butter and flour to the resulting paste in any order. Mix well, and after that add the reserved baking powder.

Add our sesame seeds (while still hot) to the prepared mixture. Now you need to spoon it onto a baking sheet (the bottom is already covered with parchment). We will level the dough with a fork. If you use a spoon or spatula, it will stick.

We put the container in the oven (it is heated to 180 C), and after 10 - 12 minutes we take it out.

During this time our dough has set. Cut it into rectangles with a sharp knife and move them away from each other (so that the sides of the cookies are also baked). We put it back and keep it for the same amount.

It is very good to cook such a “confectionery” in an oven with a convection mode (when the heating elements are turned off).

If the equipment is ordinary, then after 10-13 minutes you need to look and check if it is burning.

Add lemon juice

If you use a cookie recipe with sesame seeds and lemon juice, it will turn out not as dry as in the previous case, but more fluffy.

The following products will be needed:

  • 60-65 g butter (butter);
  • 120-130 g granulated sugar;
  • 70-75 g flour (preferably premium);
  • chicken egg;
  • 160-170 g sesame grains;
  • half a teaspoon of salt and soda;
  • tea a spoonful of lemon juice (freshly squeezed);
  • ½ tsp. spoons of vanilla (or a bag of vanilla sugar).

Let's start the process.

  1. Combine the dry ingredients (excluding sugar) into a total mass.
  2. Beat the butter (after standing on the kitchen table, it has become soft) with sugar (first with a fork). There we put the egg, vanilla, and lemon juice. You need to beat it all thoroughly again for at least 25 seconds. Now our assistant is the mixer.
  3. We set the device to low speed and at the same time slowly introduce flour into the mixture in a thin stream.
  4. When we're done, stir in the sesame seeds (all we have) into the dough. It can be raw, or it can be pre-fried until golden brown.
  5. While we were preparing the dough, our oven preheated to 180 C.
  6. Be sure to place special parchment on the baking sheet. Using a dessert spoon, place portions of dough on it, but not too close to each other. Then, as they spread, the cookies will not stick together.
  7. Bake for at least eight, but no longer than fifteen minutes. Then our shortcakes will not remain raw, but will not burn either.

With cheese - with beer

Sesame cookies can be served not only with hot tea or warm milk, but also with cold drinks - juices (for example, tomato) and even beer. Only in the latter case such a snack is not made sweet.

Let's try to create it.

  1. We take out a larger deep bowl from the cabinet. Sift into it high-grade flour (a glass) made from wheat, and then add grated cheese (150-160 g, hard, of any kind).
  2. After this, add soft butter (from cream) into the resulting mixture and drive in a fresh chicken egg. Mix everything carefully.
  3. Queue for condiments. We have ¼ tsp. spoons of nutmeg (grated) and a full teaspoon of cayenne pepper.
  4. The result is an elastic, tight dough. Wrap the semi-finished product in foil and send it to cool in the refrigerator for an hour.
  5. Roll out (the layer should not be thin). Using special baking figurines we squeeze out the pieces.
  6. Place them on a special silicone mat and grease them with egg yolk (before that, beat it with a spoonful of water). We make sure not to miss a single cookie.
  7. Ten minutes in the oven will be enough for the beer snack to reach the desired condition.

Zebra stripes: baby

Children love bright things - toys, clothes, and even food. Therefore, two-color cookies with sesame seeds will go with a bang!

To bake such “zebra stripes”, you will have to prepare a rather impressive list of ingredients:

  • sesame (white) – four to five tablespoons. spoon;
  • coffee (instant coffee is better) - a heaped teaspoon is enough;
  • a tablespoon of regular and condensed milk;
  • 10-12 grams of baking powder;
  • cream margarine (200 gram package);
  • three pieces of eggs;
  • 1.3 cups granulated sugar;
  • ½ cup sesame flour;
  • ½ cup potato starch;
  • three and a half glasses of flour (premium wheat).

Now we can begin.

  1. Combine all dry products (except granulated sugar) into a common mixture.
  2. In a mixer, turn two eggs and sugar into a white, fluffy cream.
  3. We introduce margarine into it, which was previously melted and cooled.
  4. Little by little add our dry mixture to the resulting liquid. Mix the dough. It should turn out tender and soft.
  5. We assemble the workpiece into a “bun” and wrap it in cling film. Leave it in this form for one and a half to two hours in the refrigerator.
  6. We divide the “bun” into parts - from three to four. We roll each one out, but not very thinly. Cut out the molds. For example, bunnies, horses, hippos (whatever you have). Children really like to “crunch” cookies this way. While one piece of dough is in progress, the rest are waiting their turn on the refrigerator shelf. The dough is buttery and should not lose its shape during baking.
  7. Let's create a coffee and egg cocktail. For this, dissolve coffee in milk, add the yolk of the last egg and beat.
  8. Thickly spread the dough animals and use a fork to “draw” wavy patterns.
  9. In the oven, at 180 C, keep for no longer than 8-10 minutes. During this time, the cookies will brown and “grow”.
  10. The final touch is to “paint” each side with condensed milk and sprinkle with sesame seeds so that they stick.
  11. Now the “zoo” is ready to be eaten.

What if there is no flour?

You can bake sesame cookies without wheat flour. Without it at all. Make do with just sesame seeds, grinding the seeds thoroughly (it’s convenient to use a coffee grinder). It will also be very tasty.

How will we cook?

  1. Grind sugar (you need half a glass) with a couple of yolks from chicken eggs.
  2. Add sesame flour (take 250-270 g) to the resulting sugar-egg mixture.
  3. Let's not forget about vanilla (or vanilla sugar).
  4. Mix and get a dough. We will “house” it in paper cupcake bags. Or just spoon it onto baking parchment.
  5. After 10 minutes, when it’s browned, we’ll take it out. And we will glue two pieces into “sandwiches” with any sweet cream.

Let's replenish our supply of homemade sweets with very simple and delicious sesame cookies. Soft inside, covered with a dry crispy crust on the outside, the products are thoroughly permeated with aromatic grains. The cookies break easily, but do not crumble or fall apart - the loose structure reliably retains its shape. Therefore, it is convenient to take such pastries with you on a walk or picnic, as an addition to tea and coffee.

The cookies are prepared without any baking tricks - the dough is kneaded quickly and laid out on a baking sheet in the form of regular flat cakes. No special units, complex molding, sculpting or decoration. The technology is elementary, and the products are almost basic. The only and obligatory condition of the recipe is that there should be a lot of sesame grains, almost twice as much flour. Then the cookies will not be faceless and will delight you with a rich and expressive taste.

Ingredients:

  • sesame - 150 g;
  • egg - 1 pc.;
  • flour - 80 g;
  • sugar - 50 g;
  • butter - 70 g;
  • salt - a pinch;
  • baking powder - ½ teaspoon;
  • vanilla sugar - 10 g.

Sesame cookies recipe with photos

  1. Pour sesame seeds into a dry frying pan. Stirring, fry over low heat until light golden brown. We make sure that the grains do not begin to darken and burn! Remove from the stove and cool.
  2. Take the butter out of the refrigerator in advance and let it melt at room temperature. Grind the soft butter mass with simple and vanilla sugar. There is no need for a mixer - a regular spoon or fork can easily do the job.
  3. Add the egg, throw in a pinch of salt. Stir.
  4. Combine flour with baking powder. Sift and add to the oil mixture.
  5. Stir to dissolve any dry areas. We obtain a viscous and stretchy homogeneous dough.
  6. Add cooled sesame seeds.
  7. Stir to distribute the grains evenly. The mass should be soft and sticky, but still hold its shape.
  8. Cover the baking sheet with parchment paper. Using a spoon, scoop up small portions of the dough and place them on a baking sheet, spreading them into round cakes with a diameter of about 4-5 cm. Leave a distance between the pieces, since during the baking process the sesame cookies noticeably “spread” in diameter. Sometimes, in order to save time, the dough with sesame seeds is laid out on a baking sheet in the form of one thin cake, and after baking it is cut into portioned square or rectangular cookies - this option is also acceptable.
  9. We send the preparations to a preheated oven at a temperature of 180 degrees. Bake for 10-15 minutes until the cookies have a golden brown edge. Let the finished specimens cool. From the proportion of products indicated in the recipe, approximately 15-20 pieces of sesame cookies are obtained (the quantity may vary - depending on the size of the products).
  10. Fragrant and delicious sesame cookies are ready!

Enjoy your tea!

Despite the ease of preparation and relatively basic composition, sesame cookies turn out to be impressive in taste, incredibly nutritious and healthy. A dessert like this will transform any tea party and fill it with new flavor notes.
