What unusual things can you cook? Menu on the go. What unusual things can you cook? What to cook on vacation

Summer is approaching - it's time for vacations, sunny weekends and relaxation away from civilization. Weekend tours, somewhere away from the hustle and bustle of the city, are becoming more and more popular. And often, especially when preparing for the first long outing into nature, and even with children, we ask ourselves the question: what to feed this horde that has been running around in the fresh air?

Navy pasta has already become a symbol of camp life due to its simplicity and speed of preparation. But the menu is quite possible to diversify. So, everything in order.

Food storage

The duration and conditions of a summer vacation can vary dramatically, and along with them, the sets of products prepared for a hike or trip will also vary.

When leaving the city for a couple of days or the first days of a long road rally, it is quite possible to provide yourself with fresh vegetables and fruits.

Potatoes handle the road well and will be an excellent part of the diet. Late potato varieties do not germinate longer, so they will survive the entire holiday.

Liquid dairy products are poorly stored on the road, not only because of the temperature, but because of vibration from movement; it is better not to take them on the road at all. The butter, even if it has time to melt, will not spread if it is transferred to a container. Cheese for longer storage should be of the hard variety.

Meat products are also very unreliable ingredients; smoked products are best stored; for convenience, they can be cut or twisted in advance and transported in a container.

An excellent way to extend the life of fresh food are car refrigerators, thermal bags and thermal bags: if you put bottles of ice in them, they will last faithfully for up to three days, the more ice, the longer the temperature lasts, and at the same time this is a supply of cold drinking water.

When going into nature for a longer period, we cannot do without shelf-stable products: pasta, cereals, flour, powdered milk, powdered eggs, sugar, salt, canned meat, fish, vegetables.

For bread products, in addition to crackers, various slices and breads are suitable. Cookies, crackers and nuts are great snacks.

If there are certain requirements for the weight of food, the main helpers will be dry vegetables (potatoes, carrots, onions, peas), mushrooms, fruits and herbs.

And, since we are going to nature, we should not forget about its gifts. Many herbs growing under your feet can add vitamins to a salad or soup. We most often use the services of nettle, pine and clover.

Mushrooms and freshly caught fish are a good base for main courses.

For a delicious vitamin tea, raspberry and currant leaves, mint, bergenia, ziziphora are suitable...

And in almost all forests and all fields a wonderful healthy dessert grows.

Camp kitchen

Now let's figure out how to cook what we took with us. Usually the first association associated with camp cooking is a pot. But there are many other ways.

If you have a gas stove in your arsenal, then you can cook and fry anything, the process is no different from cooking at home.

Only in windy weather should the kitchen area be protected from the wind, for example, by protecting it from the stove on the leeward side with a case or moving it to the vestibule of the tent.

Another, less voluminous device for a camp kitchen is a grill grate. Any two supports are needed - and the universal slab is ready.

You can also place a pot or frying pan on the grill.
If you don’t have any supports at hand, it doesn’t matter either. We dig a hole in which we build a fire, and place a grate on top. In this case, even any four metal rods instead of a grate will do.

It is possible to cook a couple of dishes over a fire without having any utensils. Fish, sausages, bread are wonderfully fried on fairly strong branches... But if sausages and bread are fried quickly, and the process becomes entertainment even for children, then it is better to fix the fish in the ground, tilting homemade skewers towards the fire, all that remains is to change them from time to time position.

Stones are used not only for arranging the hearth, but also as a kind of tile. The stones must be dry and uniform, otherwise there is a risk that they will crack when heated. If there are only small stones in the area, they are laid out with their flat side up, and the fire is built directly on them. When the fire burns out, the coals are swept off the stones and the stove is ready. Large cobblestones are placed directly on the fire, and then it is not necessary to wait until the fire burns out completely, the main thing is that the stone warms up enough.

While camping, you can even bake, and not just potatoes in ashes. You wrap any products according to your favorite recipes in baking foil, bury them in the coals, and - voila - you have a camp oven. Depending on the amount of coals, everything is cooked in approximately the same way as in a conventional oven at high temperature, or even faster.

Dishes on the go

We collect a minimum set of dishes in accordance with our menu and cooking method.

To prepare hot food - a pot and/or pan, frying pan. If you accidentally forgot the frying pan, fold the baking foil 4-6 times, form a plate, it’s quite possible to fry something on coals in it.

You can take disposable plates, spoons, and forks, but then for some time after dinner you will have to carry them in a garbage bag until you find a place for the garbage. And in this case, you need to take at least one spoon or spatula with you for stirring, as plastic spoons will melt.

To save space, you can take reusable plastic dishes. Various containers for storing food will also come in handy.

It is very easy to wash dishes using sand or soda and salt, you can also take mustard. But if you still intend to use your usual dishwashing detergent, do it away from the coastline so as not to disturb the ecosystem.

Camping recipes

By and large, if we know how to cook over a fire, exact recipes are not needed. You can prepare any dishes for which you have enough imagination and ingredients. So I'll just share some ideas.

Breakfast/dinner

  • Eggs: omelet, scrambled, boiled.
  • Any milk porridge, you can add nuts and/or dried fruits. Milk porridges (except semolina) are first cooked in water, and then, when the water begins to be actively absorbed into the cereal, milk powder diluted in water is added.
  • Sandwiches: vegetable, with butter and honey/jam, egg sandwiches (a mass of boiled eggs with cheese and mayonnaise), hot toast with cheese.
  • Pancakes - American pancakes (something between our pancakes and pancakes): a glass of flour, a glass of milk, 1 egg or tbsp. spoon of powder, tbsp. spoon rast. oil, 1 tsp. slaked soda, salt, sugar to taste).

First meal

  • Mushroom soup made from fresh or dried mushrooms (mushrooms, potatoes, onions, herbs).
  • Fish soup made from fresh or canned fish (fish, potatoes, onions, herbs).
  • Vermicelli soup (canned meat, vermicelli, potatoes, carrots, onions).
  • Rice soup (canned meat, rice, potatoes, carrots, onions).
  • Pea soup (smoked meats, peas, potatoes, onions).
  • Hunting soup (smoked meats, potatoes, carrots, onions, olives, tomato paste, herbs).
  • Kharcho soup (canned meat, rice, onions, prunes, tomato paste, herbs).

We often cook something between hunting soup and kharcho: smoked meats, rice, onions, olives, herbs.

Another idea is camp chili: canned meat, beans in tomato sauce, onions, herbs.

And we also have one extreme recipe in reserve, which has never come in handy yet, but we keep it in our heads for every firefighter - field cabbage soup: canned meat, potatoes, onions (if there are any left) and all the edible greens that can be found.

Since in camping conditions you are unlikely to cook first, second and compote, the soup can be cooked thicker.

Second courses

  • Potatoes in any form: boiled, stewed with canned meat, mashed (if you brought a potato masher), fried, fried with mushrooms, baked, potato pancakes.
  • Pasta: with stew (a classic of the genre), with cheese sauce (butter, flour, milk, cheese), with tomato sauce (butter, flour, milk, ketchup or tomato paste with spices), with smoked meats and fried onions, When cold, you can add it to a vegetable salad.
  • Rice is even more versatile than pasta. Not so popular on hikes, most likely only because it takes longer to cook. But if you soak it in water overnight, then this drawback is eliminated. From rice you can prepare everything the same as from pasta, plus rice with any canned vegetables or fish, or mushroom pilaf.

A hike or picnic in nature is perhaps the most accessible form of recreation. A trip to the forest, to a river or lake will allow you to relax and unwind from the bustle of the city without any special expenses. What to take with you on a hike

If you are not going on a long hike, you should limit yourself to a minimum of things, because you will have to carry them. First of all, take care of food. For a short hike, the best option is sandwiches. They should be supplemented with vegetables; fruits and cookies are suitable for dessert. In addition, you will definitely need backpacks, comfortable shoes and hats, as well as drinking water.

You need to prepare carefully for a long hike. When packing, take into account the duration, complexity of the route and weather conditions: this will determine whether it is worth stocking up on warm clothes or whether you can travel light. Discuss with the participants of the hike who will take what, so as not to take the same thing. In any case, the things you will need are:

  • Backpack. It should be roomy and comfortable. A backpack with a volume of 50 to 70 liters is considered optimal, for strong men up to 100 liters. It must be made of dense, strong fabric, and its straps must be securely attached.
  • Tent, sleeping bag, sleeping mat. You will need them if you are planning an overnight trip. These things will make your vacation as comfortable as possible.
  • Knife, axe, lighters or matches. Matches should be sealed tightly. For example, wrap it in a bag and wrap it with tape.
  • Flashlight. Better take a headlamp.
  • Cloth. You may need a couple of sets of underwear or thermal underwear, three to four pairs of socks, a warm sweater, a couple of T-shirts, shorts, a hoodie, a hat, a windbreaker, jeans, sneakers, sandals, sleepwear, a swimsuit or swimming trunks - if you are wearing The route will come across bodies of water suitable for swimming.
  • Raincoat.
  • Hygiene items– toilet paper, wet wipes, soap, toothpaste, brush, hygienic lipstick.
  • Mirror, comb.
  • Towel.
  • Fishing rod.
  • Insect repellent, sunscreen.
  • Money and passport. Be sure to pack them in a sealed bag.

1. Before thinking over the picnic menu, you need to choose a good location. If you already have a favorite and proven place, then this is just great, and you can move on to the next point.

If there is no such place, then when choosing it, give preference to the river bank near the forest. The only downside is that you might spend a lot of time on the road. Another option is a city park, where there are already places for barbecuing or just for gatherings.

2. Consider the composition of the company in which you would like to spend your day off. After inviting friends to a picnic, immediately distribute “responsibilities” among them - what exactly should someone take, buy or prepare.

3. Before the most interesting and tasty list, it is worth making another, no less important list of necessary things for a comfortable stay. It varies depending on the location you choose, the weather and the number of people, but in general you will need the following things:

  • folding chairs and table;
  • sun loungers or sun loungers;
  • umbrella;
  • pads;
  • bedspreads or blankets;
  • towel;
  • insect repellents;
  • sunscreen.

If you are traveling overnight, then add a tent.

Don't forget about comfortable shoes, clothes and hats. Be sure to take a first aid kit with essential supplies.
Think about your entertainment: music, board games, badminton, etc. A camera or video camera will most likely also come in handy.

4. So, let's move on to the products. Think about how, where and on what you will prepare food. If you fry meat, be sure to take:

  • grill or barbecue;
  • skewers or grill;
  • matches, lighter;
  • coals or firewood;
  • ignition agent;
  • several newspapers;
  • axe;
  • paddle for inflation;
  • a bottle of water.

Useful in any case:

  • 1-2 cutting boards;
  • 2-3 sharp knives;
  • tablecloth or oilcloth;
  • dry and wet wipes;
  • disposable tableware (flat and deep plates, forks, knives, cups);
  • toothpicks;
  • corkscrew or bottle opener;
  • garbage bags.

Food and drinks are the final and most enjoyable part of the list. To grill kebabs you will need:

  • meat (it is important to choose tasty meat: soft, tender part with a pleasant color and smell, not watery, not sticky, elastic. Delicious kebab is obtained from pork neck, lamb, beef - especially from internal tenderloin, rabbit, chicken, fish. If you have even the slightest doubt about meat, then it’s better to go to another store or market);
  • spices;
  • products for marinade (depending on preference): lemon, kefir, olive oil, mayonnaise, vinegar. For tougher meat, you can add alcohol (but not wine, but cognac, vodka or beer) or fruit (for example, kiwi) to the marinade. Do not avoid marinade - any store-bought meat requires it, since it is, first of all, a preservative that helps maintain the freshness and safety of the meat.

Are your suitcases already packed, the sea surf is calling you to it, and in your thoughts are you already sunbathing on the sandy shore? Then the time has come to think about an important component of your vacation - food at sea. Typically, there are three options for a delicious meal on vacation - a cafe or canteen, a snack on the beach, or preparing full breakfasts, lunches and dinners yourself. In addition, the sea is a chance once a year to enjoy the freshest delicacies - sea fish, shrimp, mussels or crayfish. How to properly organize your diet so that your vacation does not end in a hospital bed, but only brings pleasure and health?

First, consider the country with what climate you are traveling to. If you are heading to the tropics or another place where the climate is different from yours, you should be especially attentive to the products. Acclimatization is often accompanied by nausea, headaches, abdominal discomfort and other ailments. In such cases, eat little by little, drink more fluids and hold off on exotic foods.

If you tolerate climate change normally, then expand your diet carefully and gradually. Don't overdo it with new dishes:

Remember the basic rules of nutrition at sea so that your vacation brings maximum benefits.

  1. The best food is homemade. After all, you will be able to choose the freshest products and be confident in observing the standards for preparing dishes.
  2. If, while eating food in a cafeteria or cafe, you feel that something is wrong with the taste, refuse the dish. In hot weather it is very easy to get poisoned in public food places and a spoiled taste is the first sign that the food has gone missing.
  3. Try new exotic foods and dishes one by one. Eat each new dish no earlier than the next day after the previous one. If you order soup in a cafe that does not contain a single ingredient you are familiar with, then it is better to refuse it. The body endures severe stress, changing its usual lifestyle. Therefore, he may simply not be able to bear such a load as completely unfamiliar food. If for locals this is traditional cuisine, then for you the dish can be disastrous.
  4. Be very careful when buying various ready-made food on the beach (chebureks, shrimp, fish, baklava). If you can’t resist cheburek, then it’s better to buy it where it will be cooked before your eyes. Although you still won’t be able to find out the quality of the minced meat and what it is made from.
  5. Don't forget that in summer you sweat a lot and your body needs to replenish its fluid reserves. Cook compotes, drink plenty of water, prepare cold soups.
  6. Maintain personal hygiene. Microorganisms multiply when it’s hot outside, so don’t forget about showering, washing dishes and washing things in a timely manner.

If you are going to the sea with children or heading to a town or village, far from civilization, be sure to take a first aid kit with you. Put there: antiseptic for treating wounds, activated carbon or other adsorbent, cotton wool, bandage, antipyretic, insect bite repellent, sunscreen, pain reliever.

Let's summarize. If you want to have a good rest at sea, and not spend your vacation in the hospital, then carefully monitor your diet. Of course, it is impossible to stand near the stove all the time when you come to swim and sunbathe. But still, try to cook on your own at least sometimes, especially if you are vacationing with children. Do not overuse products purchased on the beach. Better bring a sandwich or fruit with you. Don’t rush into exotic foods; introduce them into your diet gradually. Remember that many seafood can be allergens for children. Don't forget to take a first aid kit with you to insure yourself.

We wish you a good rest and get only pleasant emotions and unforgettable impressions from your vacation. Don't forget about our recommendations! Eat right!

Shurpa

dnaumoid/Depositphotos.com

This is a dish of oriental cuisine, which has different but consonant names among different peoples: shurpa, chorba, shorpo, sorpa and others. But whatever you call it, it’s a rich meat soup with vegetables. It turns out especially tasty if you cook it over a fire. The dish is labor-intensive, but if you are outdoors all day, it will warm you up and energize you.

Traditionally, shurpa is prepared from lamb (it is better to take fresh). But you can use beef or pork. Let's turn to the classics.

Ingredients:
1 kg of lamb (possibly with bone);
100 g fat tail fat;
1 kg of onion;
1 kg of potatoes;
500 g fresh tomatoes;
5 medium carrots;
5 medium bell peppers;
5 liters of water;
salt, peppercorns and other spices;
greens (parsley, basil, cilantro, etc.).
For the marinade:
500 ml vinegar;
500 ml water;
salt and sugar to taste.

Preparation

First, pickle the onion. Take half of the available onion (500 g), cut it into rings, salt and pour a mixture of water, vinegar, salt and sugar. Place under a press and leave for 1-2 hours.

To prepare shurpa you will need a cauldron or pan with a thick bottom. Melt the tail fat in it. Cut the lamb into large pieces and fry with spices (this can be cumin, barberry, ground coriander - to your taste). Remove the fried lamb from the cauldron for a while. Fry the chopped carrots and the second half of the onion in the remaining fat. Return the lamb to the cauldron. Add coarsely chopped tomatoes and bell peppers. Simmer the meat and vegetables for a few more minutes.

Then fill them with water, cover the cauldron with a lid and simmer for about two hours. When it boils, skim off the foam. Finally add coarsely chopped potatoes and peppercorns. Salt and add spices to taste.

After another 20 minutes, you can pour the shurpa into plates. It's done like this. The broth is poured into one plate, and the meat and vegetables are placed in another. Everyone will add as much lamb and vegetables as they want. Sprinkle the broth with finely chopped herbs and add pickled onions (required!).

Hamburgers

ehaurylik/Depositphotos.com

Sandwiches with cutlets and vegetables are considered fast food. However, cooked with your own hands, and even in nature, they taste completely different. In addition, preparing hamburgers is quite simple.

Ingredients:
5 hamburger buns;
3 medium onions;
5 slices of processed cheese;
lettuce, tomatoes, cucumbers and other vegetables;
mayonnaise, sauce or mustard to taste.
For the cutlets:
500 g minced beef;

2 medium onions;
salt and black pepper to taste;
olive oil;
Worcestershire sauce.

Preparation

The amount of ingredients depends on how many burgers you want to make. In this case it is designed for five people.

First we prepare the minced meat. Pork will be too fatty for it, so it is better to use beef or turkey. Pass the meat through a meat grinder. Finely chop the onion and fry in olive oil until golden. Grate the cheese. Mix all the ingredients, add salt and pepper, add a little Worcestershire sauce and form into cutlets. Attention! The cutlets should be the size of the buns. Also, in the middle of each of them you need to make a depression so that they do not lose their shape when frying.

It’s more convenient to make cutlets at home, freeze them and bring them with you to a picnic. But it can also be molded on site. The main thing is to prepare the minced meat in advance.

Carefully place the cutlets on the barbecue grill and fry on both sides. Cut the buns crosswise and dry them on the grill so that they do not soften when the juicy cutlets are placed on them. If desired, you can fry bacon in addition to the cutlets.

Let's start assembling the burger. Nothing limits your imagination here. There are many options. For example, place lettuce leaves on the bottom bun (to protect it from getting soggy), pour ketchup, mustard or mayonnaise (any sauce of your choice) over them, place a cutlet, and cheese on it. Next are fresh or pickled cucumbers, tomatoes and onions pickled at home. Top with the other half of the bun. The hamburger is ready!

You should not put it through a meat grinder or grind it with a blender, as there will be too much juice. Also finely chop the green onions. Combine all these ingredients, salt, pepper and add spices and herbs to your taste.

An important point is kneading the minced meat for the lula. More precisely, it must be repulsed. To do this, gather the resulting minced meat into a lump and forcefully throw it into a bowl. Repeat the process for 10 minutes. With each blow, the minced meat will lose juice and become more plastic. To prevent it from sticking to your hands while kneading, wet them in salted water. After this, put the minced meat in the refrigerator for an hour.

When the coals become hot, the minced meat should be strung onto skewers in the form of sausages 3–4 cm wide and about 15 cm long. Wet your hands with water and, pressing the minced meat tightly to the skewer, form the sausages on the skewer. Lula kebab is fried quickly and served with adjika or other sauce, pita bread and vegetables.

For the dough, mix regular and vanilla sugar. In another bowl, combine flour, baking powder and salt. Separately, beat eggs, sour cream and vanilla extract. Add flour and sugar to the resulting mixture. Continue whisking. Add softened butter. Whisk. Then slowly add the milk into the batter and continue beating on low speed. As a result, the dough will not be tough, but not liquid either. You can also make the batter into any cupcake recipe you like.

Wash the oranges and cut them in half. Use a spoon to scoop out the pulp from each half. Do not thoroughly peel the fruit; let the pulp remain on the walls of the peel. This is where the home preparations end.

All that remains to be done outdoors is to prepare the coals and place the oranges in “nests” made of foil, or you can use an old metal muffin tin. Fill each half three-quarters full with dough and place them on the coals.

The speed at which cupcakes bake depends on the heat. This usually takes about 10 minutes. You can check the readiness of the cupcakes using a toothpick.

Serve the cupcakes directly in the orange cups.

Grog

Of course, a picnic is incomplete without drinks. Although May is pleasantly warm, the weather is often capricious. Therefore, it is important to have something warming.

Grog is an alcoholic drink invented by English sailors and named after Vice Admiral Edward Vernon, nicknamed Old Grog. It was he who came up with the idea of giving the sailors not pure, but diluted rum, in order to save money. Thus the grog recipe was born.

Ingredients:
water;
tea (infusion);
cognac;
rum

Preparation

The amount of ingredients depends on the size of the pot and the company. First, brew strong tea, and then add cognac and rum to it in the ratio for 1 liter of tea: 5 teaspoons of cognac and 5 tablespoons of rum.

When the drink boils, pour it into mugs and enjoy the pleasant warmth.

Camping coffee

You can take a thermos with you, or you can brew a flavorful drink right on the fire.

Ingredients:
5 tsp. instant coffee;
1 liter of water;
100 g chocolate;
sugar to taste.

Preparation

You can brew Turkish coffee over coals. This requires a Turk and skill. An easier option is to brew coffee directly in a pot or kettle over a fire.

Pour water into the pot, bring it to a boil and add coffee. After a couple of minutes, add the chopped chocolate. Make sure the drink doesn't run away.

When the chocolate has completely dissolved, pour the coffee into mugs. Each one can be sweetened to taste.

We hope that we have inspired you to diversify the menu for your May picnic.
