Salad with herring and beets, but not a fur coat! Do you know such a recipe? I know. And I do it, by the way, much more often than a herring under a fur coat. Because it's easier. In many times. Especially considering that in our stores boiled beets are cheaper than fresh ones (and are much more common), respectively, I make this salad from boiled beets. In this case, I spend on its preparation, in general, only 5 minutes. True, then he needs to let it brew for another half an hour (better - even more).

If you have all the ingredients at hand, then such a salad with herring and beets can be prepared in the morning and eat at lunch or in the evening.

Please note that I do not have salt in the composition of the ingredients. Salting his herring. And my herring is slightly salted. Accordingly, if your herring turns out to be more salty, then you will need ... more beets. Well, or less herring for the same amount of beets. This must be taken into account. So be sure to try the salad with herring and beetroot as it cooks, because one of its main ingredients is also its seasoning.

Finely chop the herring. In fact, the smaller, the better. Especially if the herring is very salty.

We combine all the ingredients. We put the herring not immediately, but in portions, so as not to oversalt the salad. Mix everything well, checking the salinity level.

In taste and composition, it is somewhat similar to ours, but there are differences. Its peculiarity is that the herring is added to the salad strongly salted. It is salty, and not lightly salted, it is not soaked in milk to soften the taste. It balances the taste of the finished salad with potatoes and pickled onions, which must be kept in vinegar for 15-20 minutes.

Pay special attention to the choice of beets. It should be sweet, maroon in color. It is better to boil for a couple or bake in foil in the oven - with this preparation, the beets will retain their color, taste and will not pick up water.

In the original recipe, the salad is dressed with sour cream. It can be mixed with ready-made mustard - sweet or spicy, add a little pepper or vinegar. In general - adjust the dressing to your taste. If mayonnaise is more familiar to you, make a sour cream mayonnaise salad dressing.
Salad with herring, potatoes and beets can be served for dinner as a main course or as an appetizer for the festive table. It is better to cook it at least half an hour before serving, so that it has time to soak in the sauce.

Ingredients:

- salted herring - 1 fillet;
- boiled potatoes - 5 pcs;
- onion - 1 medium head;
- boiled beets - 2 pcs;
- sour cream - 150 ml;
- table mustard spicy or sweet - 1 tsp;
- vinegar - 0.5 tsp (or lemon juice);
- ground black pepper - to taste;

For the marinade you will need:
- vinegar 9 or 6% - 1 tbsp. l;
- fine salt - a pinch;
- sugar - a third of a teaspoon.

To decorate the salad:

- diced onion - 0.5 pcs;
- egg yolk - 1 pc;
- green onions - a small bunch (or dill).

How to cook with a photo step by step




Boil the potatoes as convenient: steamed, in uniform or in salted water, peeled. Cook until cooked and cool. Beets for any salad are best steamed without peeling. Or wrap in two layers of foil and bake in the oven. Beets boiled in water lose most of the vitamins, and with them the taste and color. Cool vegetables and clean.





When the main products are ready, we start cutting. Finely chop the onion. We prepare a marinade from table or apple cider vinegar, salt and sugar. Pour onion with marinade, leave for 15-20 minutes.




While the onion is marinating, cut the vegetables and herring. Let's start with potatoes. We cut the tubers into slices, then into medium-sized cubes, larger than for herring under a fur coat or vinaigrette.






We cut the herring into fillets. One fillet can be cut into thin strips, mixed with onion half rings, pour vegetable oil and put in the refrigerator. Delicious with boiled potatoes! We cut the second one first into thin slices, then into cubes smaller than potatoes.




We cut the beets into plates, then into small pieces. The finer the beetroot is cut, the more juice it will give and the faster it will color light ingredients.




Preparing salad dressing. Mix sour cream with mustard, ground pepper and vinegar or lemon juice. You can mix sour cream with mayonnaise or use only mayonnaise (preferably thick and homemade).







Mix herring, potatoes, beets. Add the pickled onion along with the marinade. Pour in the sauce and mix thoroughly.





Let the salad chill in the fridge for a bit. 20 minutes will be enough, but it is better to hold longer to soak in the sauce.
