Menu:

1. Combined meat hodgepodge for men on Defender of the Fatherland Day

The combined meat hodgepodge is very popular at all times. The real recipe is said to contain 7 types of meat (including horse meat), which make this amazing soup very nutritious and rich. For a daily dinner, this dish comes out a little expensive, but on a holiday it will be the most suitable and the man will appreciate your efforts.

Ingredients:

  • Water - 4 liters.
  • Veal on the bone - 500 gr.
  • Pork - 300 gr.
  • Smoked ribs - 200 gr.
  • Raw smoked sausage - 200 gr.
  • Boiled pork - 200 gr.
  • Boiled sausage - 200 gr.
  • Sausages - 100 gr.
  • Canned capers - 30 gr.
  • Canned cucumbers - 2 pcs.
  • Olives - 100 gr.
  • Onion - 2 pcs.
  • Tomato paste - 2 tbsp. l.
  • Bay leaf - 2 pcs.
  • Sour cream - for dressing when serving.
  • Black pepper - 5 peas.
  • Fresh lemon - 1 pc.
  • Sunflower oil - 2 tbsp. l.
  • Salt, pepper, herbs - to taste.

Cooking:

1. Thoroughly wash all types of fresh meat. Pour water into a large saucepan and put the veal on the bone.

2. We peel one onion from the husk and send it to cook in the same pan along with smoked ribs and pork slices.

3. During cooking, be sure to remove the foam so that it does not settle, does not spoil the transparency of the broth and does not begin to float with lumps. Also, during cooking, you need to salt the broth. 15 minutes before the meat is ready, throw in bay leaves and peppercorns.

4. When the meat is cooked, take it out to cool on a plate. We remove the onion and spices. If you still didn’t follow the foam, then it’s better to strain the rich broth and pour it into a clean saucepan.

5. Cut one pickled cucumber into strips or small quarters.

6. Grate the second cucumber for the thickness of the hodgepodge.

7. The second onion is peeled, chopped into strips and sautéed in sunflower oil until half cooked.

8. Add chopped cucumbers to the onion and season with tomato paste.

9. Mix everything well and simmer for 10 minutes.

10. We clean the boiled veal and ribs from the bones and chop into strips that are convenient for eating.

11. We clean the boiled pork cut from films and cartilage and also chop it into strips. We grind sausages, sausages and boiled pork.

12. We send sausage and meat slices to the broth and after a few minutes add canned capers.

13. As soon as the pieces of sausages emerge, they are ready. By the same time, all the cold cuts will be saturated with the aromas of the broth with dressing.

14. Cut the olives into beautiful rings or cut them into halves and send them to the pan to the hodgepodge. Cook for about two more minutes and leave the finished dish to infuse for about half an hour under the lid.

Olives can be added along with the brine in which they were preserved. You can also add half a glass of cucumber pickle.

2. Beef stroganoff with mashed potatoes for February 23

Tender meat that melts in your mouth, cut into thin strips and stewed in a creamy sauce after frying. Have you imagined its amazing taste? This is exactly what “beef Stroganoff” turns out to be, or as it is more often called, beef stroganoff. It was precisely tender beef that Count Stroganov wanted, and his French chef applied maximum ingenuity to satisfy the demand of the gourmet and his guests.

Although now this dish is prepared from both animal meat and poultry, the original recipe called for beef. Lamb is not suitable due to its fat content and specific taste.

Meat strips must be rolled in flour before frying, so that the juice remains sealed inside.

Another secret of the wonderful taste of this meat dish, so loved by men, lies in the creamy sauce of sour cream and cream. It is he who gives a sweet aftertaste with unexpected sourness and tenderness to the fried pieces.


Ingredients:

  • Beef pulp - 0.5 kg.
  • Cream, sour cream - 100 ml each.
  • Potatoes - 0.7 kg.
  • Milk - 3 tbsp. l.
  • Butter - 2 tbsp. l. + 2 tbsp. l.
  • Sunflower oil - 1 tbsp. l.
  • Flour - 2 tbsp. l.
  • Onion - 2 pcs. (medium size).
  • Salt, pepper, herbs - to taste.

Cooking:

1. We clean the onions and cut them into half rings.

2. From the beef tenderloin, we cut slices 1 cm thick across the fibers, which we lightly beat off, and then cut into five-centimeter strips of centimeter thickness.

3. Roll the resulting meat sticks in flour directly on the board and shake off the excess flour so that it does not burn during frying, but just wraps the meat well.

4. Pour sunflower oil into the pan and add butter. When the oil mixture is hot, send the chopped onion to fry for literally 1 minute.

5. Put the boned meat sticks on top and stew the meat on the onion pillow for about 5 minutes.

6. Mix well so that the meat is well fried on both sides to a beautiful brown crust and does not give juice. It should look like it is in a delicate glaze.

7. Salt and pepper to your liking, mix. First, add sour cream and, stirring slowly, let the meat soak in it for a couple of minutes, and then pour in the cream and simmer for ten minutes with occasional stirring.

8. Wash the potatoes thoroughly and peel and cut into pieces.

9. Boil in lightly salted water. As soon as it is ready, drain the water and knead with a crush.

10. You can directly in the process of kneading or already when the potatoes are in a mushy state, add milk and 2 tbsp. l. butter. Mix well to form an air mass.

11. We beautifully lay out a side dish of mashed potatoes in a serving plate, make a small hole in the middle, into which we lay out a beautiful slide of beef stroganoff. If desired, you can decorate with chopped pickled cucumbers and chopped or whole herbs.

3. Salad "Revnivets" to the Defender of the Fatherland

What can we hide, but all men, to one degree or another, have a sense of possessiveness and are periodically hidden or explicit, but still jealous. It turns out a kind of explosive mixture of a prickly hedgehog and a dangerous tiger cub. That is, almost incongruous character traits are combined.

So in salads, it turns out you can be able to create a prototype of the character of a jealous man: a mixture of spicy with sour, meat, cheese, sweet and crunchy. The flavor combination is so incredible that you want this dish again and again.

Ingredients:

  • Fresh chicken fillet - 200 gr.
  • Fetax cheese - 50 gr.
  • Chinese cabbage - 80 gr.
  • Slice of bread - 2 pcs.
  • Red bell pepper - 35 gr.
  • Canned corn - 2 tbsp. l.
  • Onion - 1 pc.
  • Mandarin - 4 slices.
  • Garlic clove - 3 pcs.
  • Mayonnaise - 3 tbsp. l.
  • Sunflower oil - 2 tbsp. l.
  • Soy sauce - 1 tbsp. l.
  • Provence herbs - ½ tsp
  • Sesame - 3 tsp
  • Dried basil - ½ tsp
  • Salt, pepper, dill - to taste

Cooking:

1. First, let's prepare bread crumbs with impregnation. To do this, cut the bread slices into one and a half centimeter cubes.

2. Grind a clove of garlic with a garlic press and combine in a bowl with vegetable oil and Provence herbs. So that the croutons do not turn out “fresh”, lightly salt the resulting sauce and whisk well with a fork or spoon.

3. Dip the bread cubes in butter sauce and put them in a baking dish or on a small baking sheet, and then dry them in an oven preheated to 170 degrees. It will take about 20 minutes to get beautiful fried crispy pieces. And so that they do not burn on one side - periodically mix them during the drying process.

4. Cut fresh chicken meat into beautiful small cubes. Salt and pepper to your taste and roll in sesame seeds so that they look like breaded. We send the rolled sticks to fry in heated sunflower oil and, with occasional stirring, cook them for about 5 minutes so that the meat has time to fry and not to fry. It is very important that it remains juicy inside.

5. Cut the cabbage into short strips.

6. Similarly, chop the bell pepper with straws.

7. Cooking cheese balls with spices. To do this, grind the clove of garlic with a garlic press and finely chop the fresh dill. We combine them with cheese and dry basil. Blend well until smooth.

If the cheese mixture turns out to be too dry, then you can literally add a teaspoon of cream, which can “tie” all the components together.

8. We sculpt balls from the cheese mass, simply rolling pieces of the mixture between the palms.

9. Preparing a gentle salad dressing. To do this, squeeze the juice from the tangerine slices in any convenient way. Grind a clove of garlic. Mix them with mayonnaise and soy sauce.

Mandarin can be mashed in a blender and used in sauce along with tender pulp.

10. Finely chop the onion. If the onion is too bitter, then the slices can be doused with boiling water and the bitterness will go away.

11. In a large deep bowl, combine cabbage and onion slices, fried meat sticks, bell pepper straws and canned corn. Mix everything well so that the ingredients are evenly redistributed among themselves.

12. Put the mixture into portioned plates or a beautiful dish, sprinkle with toasted crackers on top and put cheese balls with spices. We complete our masterpiece by pouring a fragrant sauce.

4. Snack "Stuffed breaded dryers"

Who would have thought that from ordinary dryers you can make a great stuffed snack! It turns out a rather unusual, but very tasty breaded combination of dryers with cheese and chicken.


Ingredients:

  • Drying - 30 pcs.
  • Minced chicken - 350 gr.
  • Milk - ½ liter.
  • Onion - 1 pc.
  • Garlic clove - 1 pc.
  • Egg 3 pcs.
  • Cheese - 150 gr.
  • Breadcrumbs - 100 gr.
  • Flour - 200 gr.
  • Sunflower oil - 1/4 cup.
  • Spices, salt, herbs - to taste.

Cooking:

1. So that the snack does not have to be chewed, it is necessary to soak the dryers in cold milk. To do this, we leave them to soften for about half an hour and keep an eye on them so that they do not become limp, but simply slightly swollen and softened on the outside, and remain hard inside.

In no case do not heat the milk, because drying in a warm liquid will simply turn sour!

2. Grind the onion along with your favorite herbs and garlic. You can do this with a blender or by hand.

3. Add minced chicken and pepper. We combine with chicken yolk and the previous chopped components. Mix well and leave in the refrigerator for 25 minutes.

4. We cut the cheese into cubes, which will fit into the drying hole in size. Approximately centimeter by centimeter for the number of snacks (30 pcs.).

5. We lay out the drying on a board moistened with cold water. First, on one side, fill it with half a teaspoon of minced meat, then turn it over. We put the cheese in the center and seal the top with the second half of a teaspoon of minced meat.

6. In three bowls, prepare the lezon (2 eggs and white are beaten with salt and your favorite spices), breadcrumbs and flour.

Instead of breadcrumbs, you can use a ready-made bag of breadcrumbs for chicken.

7. Roll each stuffed drying first in flour, then dip in lezon and roll in breadcrumbs. Then we fry the breaded “bombs” in a deep fryer or in hot oil in a deep frying pan.

8. Let the excess oil absorb into a paper towel for at least a minute and serve hot so that the inside of the cheese is still melted.

4. Cake "Napoleon" for February 23

I was surprised by the recent discovery that most men who are not very fond of sweets are still madly in love with the Napoleon cake. Crispy puff pastry with custard, it turns out, was to the taste of the stronger sex!

Ingredients:

Puff cakes:

  • Flour - 600 gr.
  • Cold water - 150 ml.
  • Butter - 400 gr.
  • Cognac - 3 tbsp. l.
  • Chicken egg - 2 pcs.
  • Vinegar 9% - 1 tbsp. l.
  • Salt - a pinch.
Custard:

  1. Milk - 1.5 liters.
  2. Butter 82% - 200 gr. + 30 gr.
  3. Sugar - 360 gr.
  4. Yolks - 7 pcs.
  5. Vanilla sugar - 2 tbsp. l.

Cooking:

1. Carefully separate the yolks from the eggs and mix them with regular and vanilla sugar. We grind them to a homogeneous mass.

2. Pour in a third of cold milk.

3. Mix well until smooth.

4. Pour the sifted flour and stir gently so that no lumps are formed that we do not need.

5. Add another third of the milk and mix until a creamy homogeneous consistency.

6. Pour the remaining third of the milk into a saucepan and bring to a boil with occasional stirring. Then, in a thin stream with vigorous stirring, so that the yolks do not “brew”, pour it into the egg-milk mixture.

7. Pour the resulting mixture into a saucepan and over low heat, constantly stirring with a whisk or spatula, heat until thickened, without boiling.

8. Put the butter (a piece of 30 grams) into the hot mixture and cool to room temperature under a lid in a water bath. It is advisable to stir periodically so that the hard crust does not freeze.

9. In a separate cup, beat the melted butter (200 grams) with a mixer.

10. Beat the thickened egg-milk mixture with a whisk or a mixer.

11. Gradually add the egg-milk substance to the whipped butter in a couple of tablespoons.

12. Beat each approach with a mixer until smooth.

13. Gradually combining the components, we should get a lush, homogeneous, beautiful and very tasty custard that can be used immediately, even after storage in the refrigerator (but not more than 2 days, because the cream contains raw yolks!).

14. In a separate bowl, combine cognac with cold water and vinegar. Then, in a glass or a deep bowl, stir the eggs with salt and combine them with a cognac-water solution. Mix until smooth. No need to beat!

15. Cut the butter into cubes and spread on top of the sifted flour.

16. Using a knife, chop the butter with flour so that you get a small crumb.

This procedure can also be carried out in a food processor.

17. We collect the butter-flour mixture in a small hill, in the center of which we make a “crater” and pour the previously prepared solution into it.

18. Knead a dense dough that is pleasant to the hands. We divide it into 12 identical balls, which, having covered with a film, put it in the refrigerator for an hour and a half.

19. We send a baking sheet to a preheated to 220 degrees for literally 40 seconds, then take it out and, turning it upside down, sprinkle it lightly with flour. We put a ball of dough and press it slightly in the middle with a rolling pin.

20. Roll out each ball right on the baking sheet to the state of a thin cake.

21. Put a plate on top and cut off the excess dough along its edge. Slightly move it aside, but do not remove it.

22. So that we do not get swollen, clumsy cakes, we evenly apply punctures with a fork all over the circle.

23. We send the cake to bake for 7 minutes. You should get a beautiful slightly light golden brownish color.

24. Carefully pick up each cake with a knife or spatula and put it to cool on a flat surface, and put the baked dough scraps on a plate.

25. Cooled cakes can be stacked.

26. Grind the trimmings to the state of crumbs, which will serve as a sprinkling for the cake.

27. In a wide detachable form, line the bottom along with the edges with cling film or foil. We put the first cake in the center.

28. Apply 3-4 tablespoons of cream.

29. Spread the cream evenly over the entire cake. From above we lay the edge to the edge of the second cake and again coat with cream. So repeat the manipulations with the rest of the cakes.

30. When we lay out the last cake, it is necessary to slightly press down on the entire pyramid of smeared cakes so that the cream comes out slightly on the edges. And then well smear on top and him.

31. In order for the cake to be well soaked, cover it with a film on top and send it to cool in the refrigerator for the night or even better for the whole day.

32. Carefully remove the detachable form and cellophane, and transfer the cake to a beautiful dish. Lubricate the top and sides with cream.

So that the edges of the dish do not get dirty when decorating the cake, it is best to cover them with parchment, which, after completing all the procedures, is removed along with excess crumbs and drops of cream.

5. Homemade cognac for men on February 23

Cooking:

1. Pour the bulk ingredients into a deep stainless steel or glass pan.

  • cognac.

For glaze:

  • cocoa powder - 3 tbsp. l.;
  • sugar - 3 tbsp. l.;
  • cream 15% - 2 tbsp. l.;
  • butter - 50 g.

For sprinkling:

  • walnuts.

For decoration:

  • strawberry jelly - 1 pack;
  • cocktail cherry;
  • confectionery balls.

Chop the walnuts and decorate the sides of the cake.

Prepare jelly as indicated on the package, pour into any mold. When the jelly is set, cut it into pieces and fill the star on the cake. Decorate the holiday cake "February 23" with cocktail cherries, confectionery balls, let it soak and can be served.

Recipe 2: Vest cake for February 23

  • 2-3 eggs;
  • half a glass of sugar;
  • 1.5 tablespoons of honey;
  • 1 teaspoon of baking soda and vinegar;
  • 50 g butter;
  • 2.5 - almost 3 cups of flour, how much dough will take. You don't need a lot, the tough dough is hard to roll out.

For smearing cakes:

  • 1.5 cups of sour cream 20%;
  • 2-3 tablespoons of sugar.

For stripes:

  • equally sour cream and heavy cream, 2-3 tablespoons each;
  • blue food coloring.

Knead the dough and bake the cakes. Mixing eggs, sugar, soda with vinegar, honey and softened butter in a saucepan, stirring, heat over low heat until foamy. Remove and gradually stir in the flour to make a moderately steep, moderately soft dough. We divide into 6-7 cakes.

Now the fun begins: we take a children's T-shirt, a sheet of cardboard and trace around the contour of the T-shirt (or just by hand) and cut out the template.

We roll out one cake thinly (1-2 mm) on a table sprinkled with flour, keep the rest sprinkled with flour in a bowl under a towel, then they are warm, soft and roll out easier.

Having rolled out the cord according to the size of the template, bake for 4-5 minutes on a fire above average on a baking sheet dusted with flour. Remove with a spatula on the table and the same, while the cake is hot, cut out according to the “T-shirt” pattern.

Thus, we bake and cut out all the cakes.

We are preparing a cream - sour cream, or simply mix sour cream with sugar and a little water, so that it is not very thick. We smear with cream all the cakes, except for the top one. And the top one is simply lubricated with sour cream, thick, so that the pattern does not blur.

Now we need to make stripes!

Mix sour cream with cream. Part of the dye (about half a bag) is diluted with a little boiled water and added to the cream, stir until a uniform color.

We fill the confectionery syringe with a “flat” nozzle and carefully draw stripes. To get it right, you should first practice on something, for example, on a plate.

All kinds of pate, a variety of salads, you can come up with a lot of something interesting. Today I propose to dwell on three options for fillings - cheese with eggs and garlic, beets with herring, mushrooms fried with onions and sour cream. Everything is clear with the fillings, but as for the vol-au-vents themselves, it’s even easier here - you just need to cut out the finished puff pastry with molds and bake, during the baking process it will grow decently and you will get chic blanks. Well, if you're a little interested, then let's get started.

  • puff pastry - 500 gr.,
  • beets - 1 pc.,
  • chicken eggs - 2 pcs.,
  • herring fillet - 4-5 pieces,
  • processed cheese - 1 pc.,
  • garlic - 3 cloves,
  • champignons - 150 gr.,
  • onion - 1 pc.,
  • sour cream - 2 tablespoons,
  • mayonnaise - 2-3 tablespoons,
  • greens - optional
  • vegetable oil - 2 tablespoons,
  • salt, pepper - to taste.

Prepare all the products on the list and proceed. Remove puff pastry from the refrigerator in advance, allow time for the dough to completely thaw. Choose any round molds, one with a large diameter, the second with a smaller diameter. So, cut out all the dough in a large shape, put half of the blanks aside, the second half is still needed.

From the second half of the blanks, cut out the rim for the flounces, using a mold with a smaller diameter.

Preheat the oven to 180 degrees. Put all round blanks on a baking sheet, gently grease each circle with beaten yolk. On top of each round blank, place a ring of dough, which is cut out in a small shape. The rest of the puff pastry, which we no longer need, can be sprinkled with cheese and seasoned with spices, baked - this will be a great addition to broths or soups. So, the dough rims themselves are also gently greased with yolk. Bake the fritters for 12-15 minutes.

Peel and grate boiled or baked beets, add mayonnaise and garlic, skipped on the press.

Salt and pepper the beets, mix.

Wash and dry the mushrooms, cut into small pieces, chop the onion into cubes. Fry the mushrooms with onions in a pan, add sour cream at the end, salt and pepper.

Evaporate the sour cream, put the mushrooms in a bowl, let them cool down a bit.

Grate the melted cheese on a fine grater, also grate one hard-boiled chicken egg, add the garlic, skipped on the press, mix.

While the fillings were being prepared, the flounces had time to bake, let them cool completely.

Stuff the flounces with the prepared filling, put a piece of herring on top of the beets. Grind all the flounces with chopped herbs and serve them to the table.

Mix the flour with soda and, after sifting, gradually add to the milk. Working intensively with a whisk, we achieve a homogeneous and smooth composition without lumps.

Add vegetable oil, mix. The resulting mass of a sufficiently liquid consistency is left for half an hour at room temperature.

After the specified time, we collect the dough with a ladle and distribute a thin layer around the perimeter of the hot pan. We prepare pancakes in the traditional way: as soon as the bottom side is browned, we turn the product over to the other side and keep it on the hot surface for another 20-30 seconds. It is advisable to grease freshly baked hot pancakes with butter to soften the edges.

We cool the pre-boiled chicken fillet and disassemble it into thin fibers.

Chop cucumbers into small square pieces.

Grind the peeled head of onion with a knife, fry in heated vegetable oil for 2-3 minutes.

To the soft onion, load the sliced ​​\u200b\u200bchampignons. Stirring occasionally, cook the mushrooms over medium heat until lightly browned. Sprinkle lightly with salt at the end.

We use two different salads at the heart of the recipe, so you need to cook them in two bowls. Eggs should be placed in a saucepan, pour water, add a pinch of salt and put on medium heat. From the moment the water boils, we detect 7 minutes, after which the eggs must be placed under cold water and held in this state for several minutes. Next, remove the shell from the eggs. The squid fillet needs to be thawed and skinned.

This can be done in the following way: with a fingernail or a sharp kitchen appliance, you need to pry off the skin and carefully remove it, pulling it away from the pulp. She will be removed according to the principle of a stocking. Next, the fillet must be thoroughly washed. Add the squid meat to a pot of boiling salted water and cook over medium heat for 3 minutes. Then we take it out into a bowl and let it cool.

In one bowl, add finely chopped squid meat, chopped 4 eggs, and finely chopped onion. We also send chopped slices of canned pineapple to the squid bowl. All ingredients are sprinkled with lemon juice and mixed thoroughly.

On a toothpick or a short skewer, you need to string a slice of cucumber on both sides, so that in the end you get a semblance of a sail. We string a triangle of red pepper on the free edge, and with the other edge we fix a toothpick in the salad fillings. The cucumber flotilla is ready, you can serve a snack on the table.
