Steam cheesecakes are good both hot and cold, for breakfast or for dessert. You can cook them directly in the steamer baskets, or you can cook them in curly silicone molds.

400 g cottage cheese (at least 9% fat)
2 eggs
3 tbsp decoys
2-3 tbsp Sahara
1-2 tbsp wheat flour (if needed)
1/3 tsp salt
for filling: grapes, pears, plums, apples, apricots

1. Grind the cottage cheese until smooth or beat in a blender
2. Add eggs, salt, sugar, semolina, mix well
3. If the mass does not hold its shape, add 1 tsp. flour, stirring each time. The less flour you add, the softer the cheesecakes will be. The mass must remain soft.
4. For the filling, cut the fruit into small pieces.
5. Lubricate your hands with vegetable oil. To mold a cheesecake with filling, take a full tablespoon of the curd mass, put it on the palm of your hand and flatten it into a cake, put a piece of fruit on it, fold your palm with a ladle and combine the curd mass into a ball with the filling inside.
6. Thoroughly roll the syrniki in flour, flatten slightly and place on the steamer grates greased with vegetable oil.

Tip: the filling can be varied according to the season, or you can cook syrniki without filling. They are great with berry sauce.

My comments : I took cottage cheese 2% fat (not 9%, as in the recipe).
I did not add flour, although the mass was liquid for sculpting cheesecakes. But I did not sculpt them, but cooked them in silicone molds for muffins.
I put an incomplete teaspoon of curd mass on the bottom of the mold, then a slice of banana, on top of a teaspoon with a slide of curd mass. My cheesecakes were steamed for 20 minutes.

I made 2 batches: I kneaded one and cooked it right away, it came out more dense. And I left the second part overnight in the refrigerator and cooked it in the morning - so these turned out like a curd soufflé - very tender.

I would take soft fruits here, and apples can even be rubbed on a grater, otherwise they will contrast strongly with the delicate curd base.
The second batch of cheesecakes was made by Gleb. At first I ate from the first batch for breakfast, then asked for more and filled out the molds myself.

The only negative is that you can’t put a lot of molds in a double boiler in a slow cooker at once, you have to do it in stages. In an electric steamer, this problem will be solved by cooking them simultaneously on several tiers.

And the recipe is actually very simple: for a pack of cottage cheese - 1 egg, 1 tbsp. sugar and 1 tbsp. decoys. Even a child will remember :)

I take a deep and large dish in which I will knead the curd dough. I put cottage cheese into it, beat in eggs, add wheat flour and 2 tbsp. granulated sugar.

Now I take a mixer, with its help it is easiest to turn the cottage cheese into a homogeneous mass without lumps. I put the whisks of the mixer in a bowl and begin to beat all the ingredients together. First, I beat at the smallest speed until large pieces of cottage cheese are broken, then gradually increase the speed and continue to work with the mixer until the mixture becomes the consistency I need. Curd dough should not be thick, but not too liquid, about the same as cottage cheese masses are sold in a store.

Now, in order to give the dough, and subsequently the finished dish, a neat outline, I take silicone molds for cupcakes and coat each of them inside with vegetable oil. If there are no such molds, you can make ordinary blanks in the form of pancakes from the curd dough and place them at a small distance from each other directly into the steamer basket. I fill each mold with cottage cheese dough a little more than half.
