In a heavy bottomed saucepan, dissolve sugar in 1/4 cup water, place over low heat and cook until sugar is completely dissolved. Increase the heat and bring the mixture to a boil; cook until caramel is dark amber, about 6 minutes. Remove from heat and very carefully pour in the cream (the caramel will splatter!). Return the saucepan to the lowest heat and cook, stirring, until smooth.

Add oil and honey, cook, stirring, 3 minutes. Remove from heat and immediately add grated chocolate, mix thoroughly. Add nuts, mix again and spread the filling on the dough. Smooth the surface, let cool to room temperature, then refrigerate for at least 3 hours, preferably overnight.
