Fish in our family often appears on the everyday table. For the festive table, I cook fish exclusively as an appetizer or as a hot dish. Today I want to tell you a simple and delicious recipe for cooking sole (Pangasius) in batter, because this recipe has been living in our family for many years and I think someone can also use it and be 100% satisfied with the result. In this version, you can cook absolutely any fish (pollock fillet, cod fillet, telapia fillet, etc.), but for some reason I used to cook pangasius fillet as a cold snack. This fish is very fatty and just fried or boiled, I don’t perceive it at all, but in batter - the sole just transforms, becomes tender, tasty and just very quickly disperses on the plates of my guests and family. Everyone eats sea tongue in batter with great pleasure, so I recommend cooking (if you like) this fish and treating it to your family or, like me, to my guests.

Required:

  • Sea tongue fillet (pangasius) - 3 pcs. (about 800-900 gr.)
  • Mayonnaise - 200 ml.
  • Eggs - 4 pcs.
  • Flour - 4 tbsp. with a slide
  • Salt - to taste.
  • Ground black pepper - to taste.
  • Vegetable oil - for frying fish.

How to cook sole in batter:

Everything is very simple.
Combine in a deep bowl: eggs with mayonnaise. Beat with a whisk or just a fork.
Add sifted flour.
Whisk thoroughly again so that there are no lumps. The consistency of the batter should be about 30% sour cream. You will understand this when you start dipping the fish. The batter should linger well on the fish.
Wash the fish thoroughly and dry. I do this with kitchen paper towels.
Then I cut each fillet into portioned long pieces. Like this. I season with a little salt and ground black pepper. We put a frying pan with vegetable oil on the stove, heat it up.
And with the help (it’s so convenient for me) of two forks, I dip each piece on all sides and spread it on a hot frying pan with vegetable oil.
Fry the sole until golden brown on both sides.
Approximately 2-3 minutes on each side. This is quite enough, the fish has time to prepare.
When the first batch is ready, I put the battered fish in the prepared container. So we fry all the fish. When it is time to serve the sole on the table, we put the fish beautifully on a plate, if desired, decorate with lettuce or fresh herbs.
