To prepare marshmallow, we needed 2.5 kg of apples, 3.1 kg of pears and 2.2 kg of Kishmish grapes. Of this amount of products, 1.6 kg was occupied by waste. We dried the resulting fruit and berry puree on 12 trays and got 1.1 kg of the finished product. It took about 2 hours to prepare the raw materials. The dryer for the Izidri marshmallow worked at a temperature regime of + 55˚ C for 18 hours.

Fruits and berries are pre-washed and dried. We prepared the pallets of the electric dryer by lubricating them with odorless sunflower oil. Next, apples, pears were peeled, cut into cubes. A little more than 150 g each of all the blanks was added to the blender bowl, so that in total 500 g of the product was obtained. Then everything was crushed in a blender and the resulting fruit and berry puree was evenly distributed over the tray with a spoon. Note that the products are quite easily crushed due to the juiciness of the grapes. We do this until all the blanks are used up and the trays are occupied. Pasta is ready to dry! After 18 hours, the result was as expected: soft, but strong layers that easily fall behind the pallet, smell good and are very tasty. Now you know how to make marshmallow yourself.

How to organize the storage of marshmallow?

In order for the marshmallow not to lose its properties, it must be stored correctly; three-liter dry jars are suitable for this. Wrap each piece of marshmallow in cling film and put everything in a jar, close the lid. In this form, it will be stored for a whole year. If you plan to store marshmallow for longer, then use not a simple nylon lid, but a vacuum one, then the marshmallow will not lose its properties for 2 years. Ziplock plastic bags can also be used. The most important thing is that the storage place is dark and with a stable low temperature: a basement, a refrigerator, a grocery cabinet. Article 12.43 repeats this information practically word for word. “Production or purchase of strong alcoholic beverages (moonshine), semi-finished products for their production (mash), storage of devices for their production” in the Code of the Republic of Belarus on Administrative Offenses.   • The Ezidri Classic dryer can handle the preparation of marshmallows in about 12-16 hours.
  • Marshmallows made with a mixer are smoother than those made with crushed fruit. Pastila from some fruits (bananas, kiwi) is recommended to be prepared exclusively with a mixer.
  • Remove the marshmallow without letting it cool, roll it into a tube and store it in an airtight container in the refrigerator, so it will last longer.
